I love plantains, but they are a really tough to find when they aren’t in season and even a little tough to find when theyare.
So, I was elated when the rinky-dink supermarket in our neighborhood had them in the produce aisle.
This guilt free-dessert is just right for getting a little bite of something sweet after a summer meal.
Baked “Fried” Plantains
1. Line a baking sheet with aluminum foil and spray with cooking oil.
2. Peel plantains and slice diagonally. Lay on foil in a single layer.
3. Spray tops of platains with cooking oil. Bake at 450 for 10-15 minutes until Golden.
