Tilapia in a White Wine Sauce with Capers

I love tackling difficult recipes with ingredient lists as long as my arm, but sometimes we need to just stick to the basics and make something light and easy. Since we always have tilapia in the freezer and these few ingredients are staples that you’ll find in almost any kitchen, this is an easy weeknight meal that comes together in about 20 minutes! Believe it or not– the simplicity of the recipe doesn’t mean that it tastes plain and simple. We absolutely loved it!

Now, I know what you’re thinking: another tilapia recipe!? But what can I say? It’s a wonderfully light fish with so many options for making a flavorful, healthy meal.

Step 1: Season your tilapia filets with salt and pepper and dredge in a little flour. This going to give the tilapia a nice, light crust without being as heavy as a breaded or battered fish. Pre-heat a pan over medium heat with 1 tbsp oil (olive or vegetable is fine) and 2 tbsp butter and allow to brown on both sides.

Step 2: Once the fish is cooked through, remove from the pan and cover to keep warm. Add 1/4 cup white wine, 1 tbsp mined garlic, and 1 tbsp capers. Once the sauce has reduced by about half, spoon it over the filets.

Serve with a side of roasted brussels sprouts and pearl onions.
